The Four Types, Defined
Seltzer is the most neutral option: plain water with carbon dioxide artificially injected under pressure. It contains no added minerals, no sodium, and no flavor unless it's a flavored variety. Because it's essentially a blank canvas, seltzer is the go-to for mixing cocktails or mimicking the mouthfeel of soda without any flavor interference.
Club soda looks nearly identical to seltzer but includes added mineral-like compounds — typically sodium bicarbonate, sodium chloride, or potassium sulfate. Practical Differences That Actually Matter
In cooking: Seltzer or club soda added to batters creates lighter, crispier textures — the CO₂ acts as a leavening agent. Tonic water will introduce bitterness and sweetness that may not be welcome in savory dishes. Mineral water, depending on its mineral content, can occasionally affect the taste of delicate sauces.
In cocktails: The choice of sparkling mixer matters more than most people assume. Club soda subtly elevates spirits with its mineral quality; seltzer keeps flavors clean; tonic's bitterness provides structure in classic drinks. Substituting one for another shifts the balance of the final drink.
